Flour improver for Nigerian flour mills: what it does and how to choose

What a flour improver and a flour corrector do at the flour mill, when to use each, and how FinaAfric formulates them from your own analyses.
A flour improver is an ingredient added to flour, usually at the flour mill, to adjust how it behaves in the dough. A flour corrector combines several of them in one dosed blend, sized to the analyses of your own flour. For a mill in Nigeria, the question is rarely "which product is best": it is "what is drifting in my flour, and by how much".
**Why Nigerian mills care.** Nigeria has the largest industrial milling sector in West Africa, concentrated notably around Lagos, and very high bread consumption. Wheat is almost entirely imported, from several origins. The rheology of the flour therefore changes from one shipment to the next: the W moves, the P/L moves, the Falling Number moves. Bakeries see it as bread that is flat one day and dense the next.
**What is in a flour improver.** The main families are ascorbic acid (E300, an oxidant that strengthens the gluten network), enzymes such as alpha-amylase, xylanase and glucose oxidase, and reducing agents. Enzymes are deactivated by baking heat and do not appear on the finished bread's label.
**How to choose, in three questions.**
1. What drifts? Look at W, P/L and Falling Number over several shipments, not on a single sample. 2. What is the target? Define the window your bakery customers need (for example a W and P/L that hold for sandwich bread). 3. Is the dosage validated? A trial baking with a control without improver, then increasing dosages on a fixed protocol, tells you the dosage that reaches the target.
**What we need from you.** Your flour results (W, P/L, Falling Number) or a flour sample. FinaAfric analyses the flour in its laboratory in Casablanca (Chopin Alveograph, Falling Number, comparative trial baking) and formulates a corrector for your wheat blend. **The route to Lagos.** Sea freight from Casablanca to the port of Lagos (Apapa). Incoterms EXW / FOB Casablanca, or CIF Lagos on request. A first test container validates the formulation on your line before any supply agreement.
