Controlling spread and breakage
Breakage and excessive spread often share the same origin: a dough poorly balanced between structure and fluidity. A well-formulated mix stabilises this behaviour, complemented if needed by corn starch as a texture and tenderness agent.
Double-action raising powder
A two-stage gas release — during mixing then in the oven — for regular development and an even crumb on lines running at variable speed.
