Custom flour corrector or a multinational's catalogue product: how to choose

A flour corrector formulated on your own wheat, or a standard improver sold by a multinational: both exist in Morocco. How to decide based on your situation.

Two logics coexist in the Moroccan flour-milling and baking-ingredients market: the **catalogue product**, generally imported and sold by a multinational with a central laboratory in Europe, and **custom formulation**, done locally from the real analysis of your own flour. Neither is bad on its own — the right choice depends on your situation.

**What a catalogue product offers.** A wide range, an established brand, standardised documentation. That's reassuring on paper, and it can be enough when your flour is stable and your process doesn't vary.

**What it doesn't always do well.** A catalogue product is designed to work "on average" on European or generic wheats — not specifically on the wheat arriving at your mill this month. When your flour's W or P/L drifts from one wheat shipment to the next, a fixed dosage recommended on a data sheet sometimes over-corrects, sometimes under-corrects. And technical support, when the reference laboratory is in Europe, often means a response time measured in days rather than hours.

**What custom formulation offers.** The starting point isn't a product, it's your flour: Chopin Alveograph reading, Falling Number, then a comparative trial baking before any recommendation. The dosage is calibrated on your line, with a technician who comes on site, not on a theoretical average.

**Questions to ask before choosing:** - Does my flour change noticeably from one wheat shipment to the next? (If so, a custom corrector is worth more than a fixed product.) - Do I need a same-day response if something goes wrong on the line, or is a delay of a few days acceptable? - Should the budget be compared per kilo of product, or per real cost per tonne of flour treated for an equivalent result? - Do I need a single contact for milling, baking and pastry, or do several specialised suppliers suit me better?
