
Double-action baking powder for biscuit-making and industrial pastry
FinaAfric's baking powder is double-action: part of the gas releases on mixing, the rest under oven heat, which smooths out development from the first to the last mould in a continuous run.
What "double action" means
A standard baking powder releases most of its gas on contact with water: a batter that waits before baking loses volume. Double action keeps a reserve for the oven, narrowing the gap between the first and last mould of a batch.

Dosage
The usual dosage is around 1 to 3% of flour weight depending on the recipe and target texture: too much gives a soapy taste and an overly open crumb, too little gives a dense product. The exact point is set on your line and your real waiting time between mixing and baking.
